Objectives. To create, implement, and evaluate a nutritional practice course in the Department of Health and Nutrition Sciences Curricula in order to increase students' awareness and knowledge regarding nutrition. Design. Junior college students, who had earned the required credits, were eligible for this nutritional practice course. A 2-quarter (full-year), 2-credit course comprising pre-training, practice, and post-training were considered practical for this purpose. Assessment. The students were given 2 noncumulative examinations to evaluate learning, and there was no final examination. Finally, the students were assigned a grade based on the second judgment and papers, which was recorded in a report and notebook. Conclusions. This project reflects an innovative approach to developing and delivering a course in an important area of this curriculum and provides students the opportunity to explore an academic career in nutrition.
