著者ハ化學的見地ヨリ鑵詰肉類腐敗鑑別ノ標準ハ「アムニア、總窒素、酸度、硫化水素等ノ有無或ハ多少ノミニ據ルコト能ハサルモ肉中ノ「アムモニア」ト總窒素トヲ同時ニ定量シテ總窒素百ニ對スル「アムニア量ヲ求メ其量約一・三以下ニアルヲ常態トシ一・三以上ニアルヲ變態トスト論定シ且ツ肉中ノ「アムモニア定性試驗ニハ一般ニ賞用セラル、エーベル試藥ヨリモ寧ロ鋭敏ナル「クルクミン紙ヲ優レリトセリ
