We present the influence of equation of state in supernovae from gravitational collapse of massive stars. We examine the important roles of EOS in supernova explosions, proto-neutron stars (or black holes) and supernova neutrinos, adopting the relativistic EOS table for supernova simulations and the conventional EOS. We discuss the density-temperature range which appears in supernova simulations to see whether exotic hadrons or quarks may appear in supernova physics.
