"Miraculous berry" (Richadella dulucifica) is a red fruit that belongs to the Sapotaceae family, originally from West Africa. It has the unique ability of affecting a change in the way our mouths taste food, for instance, making a sour food seemingly taste sweet. The author made a tablet from Miraculous berry in order to test its effects. The range of effect, and its duration, were tested using the tablet. The results were as follows: For 60 minutes after licking the tablet (containing 25% freeze dried powder of Miraculous berry), most subjects could not taste sourness in a 1% citric acid mixture. For 30 minutes immediately after licking the tablet, all subjects tasted the sweetness in 0.5〜2.0% citric acid mixture, without tasting sourness. It was observed that, for foods with an acidity which was equivalent to 1% citric acid or less, the effects of the Miraculous berry lasted the full 60 minutes. In reality, there are only a few kinds of food that are equivalent to 1% citric acid. The tablet can be used at snack times between meals for patients who cut down on sugars. In conclusion, the aim of changing the taste of food for ten minutes after consumption has been accomplished. In actual fact, if the effect of Miraculous berry lasts until the next meal time, it can affect the taste of that meal, too.
