Aminopeptidase activities were measured with phenylalaninyl-4-methyl-7-coumarilamide (MCA) and alaninyl-MCA as substrates. Both activities show a peak 3 days after transfer. Hydrolytic activities against phenylalany 1 (Phe)-MCA were increased again 5 day after transfer, while that against alanyl (Ala)-MCA was decreased. When 3 times larger culture was transfer, the time for cessation of cell division and anthocyanin synthesis was advanced by approx. 4 day, the peak of hydrolytic activity against Phe-MCA was also advanced by approx. 4 day. Inhibitor study indicated different enzyme(s) was responsible for hydrolysis of Phe-MCA and Ala-MCA. These results indicated an aminopeptidase(s) that preferentially liberated Phe from peptides was induced in relation to cessation of cell division and/or anthocyanin biosynthesis.
