Interaction between allicin related compounds such as C_3H_7SSC_3H_7 (I) or [chemical formula] (II) and SH group of denatured egg albumin were investigated. The complexes were precipitated from the reaction mixture by means of ethanol and metaphosphoric acid, and repeatedly extracted with ethanol to remove unreacted I or II. The complexes obtained were not separated into their components by means of further ethanol extraction, but propylmercaptan was liberated by treating with cysteine. In the reaction of I or II with the protein of which SH groups were blocked or oxidized, the complex formatin was not observed. The effects of pH, temperature and time etc. on the complex formation were also investigated. As a result of the experiments, it was confirmed that the complexes were protein-propylmercaptan mixed disulfides which were produced by the following reactions.
