The rate of ethanol production during alcoholic fermentaiton was formulated as a funciton of the specific growth rate, μ, of yeast cells by using the correlation from Lude-king and Piret as : [numerical formula] The α value could be designated as the ratio of Y_<p/s> (yield coefficient of ethanol to glucose) to Y_g (maximum growth yield on glucose) and the numerical value could be assessed at around 3.5 (dimensionless).The expression of the second term of above equation, which corresponds to the rate of ethanol production by the maintenance matabolism of the cells, was introduced by assuming the metablism to be under the inhibiiton of accumulated ethanol as observed in the later period of sake fermentation.The value of u_<mo> was assumed to be equivalent to the Q< : CO2> value of the restin gyeast cells.Above equation was used for the prediction of ethanol produciton in batch fermentation the growth history of whose yeast cells was known. First the growth curve of the cells was simulated by a function of time, t. Scond, this function (X=f(t)) was differentiated with respect to time, thus leading to dX/dt (=μX)=f'(t). And third, these two functions of time were substitued into the equaton and solved numerically. A digital computer was used for this series of calculations.The results of the calculation followed the change in ethanol concentration observed in three examples of various batch fermentations.
