The settling velocity of yeast cells, which influences the fermentation velocity of beer wort, was theoretically and practically investigated using various shaped vessels. The hindered settling velocity (HSV) of yeast cells in a buffer solution was measured in various shaped vessels, particularly in conical vessels. The data indicated that the HSV in the truncated conical vessel was greater than that in the inverted one (TC-vessel), and this HSV was in proportion to the magnitude of the slope in the vessel wall. The practical values agreed substantially with the theoretical results. It was also pointed out that the Erlenmeyer-type flask was unsuitable for use as a fermenter in the laboratory. An investigation was made to determine the most desirable proportions for the TC-vessel, in order to accelerate the fermentation velocity in the case of a small scale fermenter. It was confirmed that the special ratio Rv[={(the volume of the TC-vessel)-(the volume of the cylindrical part projected by the base of vessel)}/(the volume of the cylindrical part)] controlled the rate of acceleration (RAC)[=(the rate of consumption of reducing sugar in the TC-vessel)/(the rate in the cylindrical vessel)]. Experimental data showed that the optimum Rv should be 1.0,particularly when bottom yeast was used.
