To find the stable condition in the double stage semicontinuous seed mash brewing using thermophilic saccharified mixture as the feed, model scale experiments were made semicontinuously. It was adequate to maintain the Be of the first and second vessel in the double stage system within the range of 11-12 and 7-8 respectively. Dilution rate of the first and second vessels was 0.60 and 0.44 day^<-1> respectively when the fermentation temperature was kept at 19℃. These values considerably agreed with those caluculated from growth rate of the yeast in the batchwise fermentation. Under these conditions double stage semicontinuous seed mash brewing was tried on a pilot scale and the changes of various constituents in each vessel were investigated in the process of the brewing. The results obtained were as follows;(1) By addition of enzyme preparatinos such as Takadiastase ss together with the feed, the constant values of amino acid and sugar composition were maintained, and remarkable alternation of the other constituents was not observed.(2) The enzyme activities of α-amylase, s-amylase and acid protease (pH 3.0) in the second vessel were 50-70%, 40-50% and 2-3 times compared with usual seed mash.(3) The yeast population in the first and the second vessel was maintained at 1.0-1.4×10^8/cc and 0.8-1.0×10^8/cc respectively, and specific fermentation ability and specific propagaiton ability were also constant.(4) The purity of the yeast examined by TTC method was higher than 90%, while the decrease of the number of the yest during was very small.(5) When the comparative brewings of mash were examined by such semicontinuously produced seed mash, no remarkable differences were recognized between control and this process.
