Redox tiration curves of complexes of amylose and iodine exhibited distinct voltametric behavior as was reported by Bates el al. Amylose content in the whole starch solution was measured by calculating the saturated adsorption amount of iodine for a definite amount of amylose, y_m. The y_m can be found from the redox titration curves with the aid of Langmuir's equation for adsorption. Application of this method to measure amylose in sweet potatoes was fairly reproducible, thus we consider it a convenient method for amylose determination in starch.Using the Piecewise Gubic Interpolation Method to fit the redox titration curves, the calcalation of y_m values was computerized with a minicomputer (IBM/34). Such help in data reduction further speeds the measurement of amylose in starch for routine work.
