Batch and ammonium controlled fed-batch fermentations were compared for the production of amylase by Bacillus amyloliquefaciens. In shake flask culture, maximum amylase production was obtained when the concentration of ammonium was 20-30 mM. In a 15 l batch fermentation, maximum amylase production occurred at an ammonium concentration of 40 mM. In fed-batch fermentations, the optimum concentration of ammonium for the growth of B. amyloliquefaciens was 10-20 mM. The maximum production of amylase and biomass was found when the ammonium concentration was controlled at 5 mM. Amylase production at 5 mM ammonium was 5000 IU/l, which represents a two-fold increase in enzyme production over the uncontrolled experiments.
