As a model culture on solid state media with forced aeration, the strictly aerobic yeast, Candida lipolytica, was cultivated on Pulp-medium under conditions of saturated humidity. The growth could be simulated, using the oxygen uptake rate(OUR)as a parameter. This simulation method was applied to growth estimation on packed steamed rice, and furthermore, to the mold growth of which data were reported by Okazaki et al. The results showed that the calculated value of cell mass agreed well with the observed data, and hence the feasibility of growth estimation of aerobic microorganisms in solid state cultures with forced aeration.
