Degree of dietary satisfaction and factors affected it were surveyed through personal interviews to the elderly residents in Kyoto City and aged 70. Out of 70 respondents, 48 lived in nursing home (nursing home residents) and 42 lived alone at home (single residents).The respondants were asked to indicate the degree if dietary satisfaction on a four-point scale 0 to 3 for Adachi's questionnaire containing 5 items. A satisfaction index of 3 reflected that every respondent was very satisfied, registering 15 for the overall maximum satisfaction score. As the factors affecting the dierary satisfaction 36 items were selected including health, pastime, joining to social activities, quantity of meal, chewing power, and so on. Results of the date analyses are as follows : 1. Degree of dietary satisfaction (a) The average score was 10.5 ± 2.9 for the nursing home residents and 9.8 ± 3.0 for the single residents with no satistically significant difference between the two grups. (b) To a question "Can you take various foods you want?" the single residents responded with a signifivantly higher satisfaction, and to "Is an atmosphere good?" the nursing home residents did. 2. Factors affecting the dietary satisfaction (a) Both residents indicated that self-rated health, chewing power, trouble-free intake of meals, likes and dislikes of meals, and an appropriate quantity of meals affected the dietary satisfaction. (b) For the nursing home residents food health and eye sight were important factors that increased the degree of dietary satisfaction, so did no feeling of solitude and uneasiness, having pastime and joining to social activities, and active participation in cooking for the single residents.
