A crude drug Oligo drink was prepared using 3 kinds of crude drugs (Ryuugan-niku, Ketsumeishi and Sansyuyu), galacto-oligosaccharide (GOS) and soybean oligosaccharide extract (SOE), and product characteristics such as preservability, sensory taste were mutually discussed. The following fact was observed in crude drug oligo drink throughout GOS and SOE : hydrolysis of the SOE accelerated remarkably during the sterile treatment, whereas the GOS was not hydrolyzed. It was considered that the hydrolysis of SOE was closely concerned, not with effects on kinds of crude drugs added, but with heating for the sterile treatment. Trisaccharide (Raffinose) was identified as major components of the hydolysis products of SOE in drink. As a sensory taste, the prepared sansyuyu oligo drink with SOE showed a high palatability, but the prepared ketsumeishi oligo drink with GOS was not the most palatable.
