Changes in constituents of kiwifruit (cv. Hayward) cultivated in Japan during development were studied. The following results were obtained. 1. The fruit grew rapidly during the early period of growth, and its size was 80 to 90% of mature fruit at 3 months after anthesis. The fruit harvested at 5 months after anthesis was optimum for after-ripening, and its soluble solids content was Bx. 7.0 at harvest. The decrease in constituents occurred between months 5 and 6,and the quality of the fruit harvested at 6 months after anthesis fell during storage. 2. Analysis of the free sugars showed that glucose, fructose and sucrose were present in kiwifruit. In the fruit harvested at 5 months and 6 months after anthesis, the content ratio of glucose, fructose and sucrose was nearly 2 : 3 : 1 and 4 : 10 : 1 respectively. 3. Quinic, citric and malic acids were the major organic acids present in the kiwifruit. Though the quinic acid content of kiwifruit was high in the early period of fruit growth, its content decreased and the citric acid content increased during development. 4. Eighteen free amino acids were present in kiwifruit. Free amino acid composition changed during development, when threonine and arginin content decreased and aspartic acid and glutamic acid content increased. 5. Fruit firmness decreased rapidly at 4 months after anthesis, when the water soluble pectin percentage of total pectin increased to 13.2%. Total pectin content was 2.17% in the fruit harvested at 5 months after anthesis.
