The authors have investigated the change of Vitamin C in fruit juice on the market and odtained the following results; 1) In the preservation of Vitamin C, canned juice is better than bottled one. 2) The fruit juice produced in 1958 has less variety and the actual Vitamin C content is much smaller than that indicated on the container. On the other hand, the juice produced in 1959,is rich in variety and the juice potentiated the effect by adding synthesized Vitamin C has been also increased in number. Furthermore, their actual contents are almost equal to those stated. This improvement may be attributed to the development of producing technique and the effect of stabilizer of Vitamin C.
